Edith’s got its start as a pandemic pop-up over the spring of 2020, at Paulie Gee’s Pizzeria in Greenpoint, NY. But the seeds of inspiration behind Edith’s – and the mission that fuels it today – has been brewing for generations.
Edith, the great-aunt of Edith’s founder, Elyssa, ran a Brooklyn deli back in the 50s. Elyssa combed through her age-old recipes and dug deep into hundreds of years of global Jewish cuisine for further inspiration.
